Spanish Rice Dinner

I don’t have a large, fancy kitchen. But my home is home and my kitchen allows me to cook nourishing meals for my family and that makes me so happy.

I found this recipe for Spanish Rice Dinner eons ago and I used to make it a lot when my kids were young. I haven’t made it in quite a while and it was nice to come back to it tonight. It’s comforting and filling. And just what I needed.

Spanish Rice Dinner

🧄1lb ground beef; seasoned, browned, & drained

🧄onion, chopped and cooked with beef (I use half of one onion)

🧄garlic, minced and cooked with beef (as much as you like..I use 2-3 cloves)

🧄 1 1/2 c long grain rice, cooked

🧄1 can tomatoes (however you like)

🧄1 tsp salt

🧄1/2 tsp ground mustard

🧄1/8 tsp (approx) fresh ground pepper

🧄1 (14.5oz) can cut green beans

🧄1 T sugar

🧄1 tsp Worcestershire sauce

🧄1/8 tsp hot pepper sauce

Season and cook your ground beef with the chopped onions and minced garlic, drain. Cook your rice according to package directions while your beef is cooking (this takes 25-30 minutes usually). Return drained beef to skillet. Add remaining ingredients, stir well to combine. Allow to heat up real good for about 10 minutes and then serve!

I love recipes like this because they are so adaptable to meet your needs. Also, I usually add more than 1lb of ground beef 😬🤷🏻‍♀️

Speaking of ground beef..let’s talk seasoning. I feel like the seasoning of your ground beef while it’s cooking can make your meal! I used to be a purist with Lawry’s Seasoned Salt..and honestly, we still love it and use it frequently! But my Aunt Elane opened my eyes to Cavender’s All Purpose Greek Seasoning and y’all....I’m a FAN!

I also like to add dried thyme, basil, and oregano. A little for all things, and quite a bit if I’m cooking Italian 😏

And of course, minced garlic. Garlic makes it magical 😏☺️
