Fresh Garden Salsa đ
Surprisingly quick to throw together! Great way to use up your surplus garden tomatoes đ
Even those that donât like tomatoes alone usually like salsa! Whatâs not to love?! And making your own allows you to control the âchunkinessâ and the heat.
I use a food processor because I like my garden salsa to be âsmall chunkâ also, itâs waaaaay easy. I do sometimes over process it a bit and it gets a little fluid-y but still tastes good!
***TIP*** if you want your salsa to have a little more âchunkâ, I found that the best way to control the wateriness is to remove the seeds and liquid from the center of the tomatoes while youâre quartering them.
Also- you could reduce the lime juice to 1 tsp, if desired.
This recipe is a basic recipe that is easy to build upon depending on how many tomatoes you have.
Salsa
đ 2 c tomatoes (1lb), quartered
đ 1/4 onion, diced
đ 1/4 jalapeño, diced (seeds optional)
đ 1/4 c (or less) cilantro, rough chopped
đ 1 garlic clove, smashed
đ 1 tsp sea salt
đ 1/4 tsp cumin
đ 1 pinch of sugar
đ 2 tsp lime juice
Place all in food processor and pulse until the consistency that you like your salsa!
Remember that the seeds and the white membranes inside the jalapeños give the heat. Include those or remove those to reach your desired heat-level! I also like to wear gloves when handling jalapeños! Those oils really stay on your skin! Wear glovesâŠyouâll thank yourself the next time you rub your eyes đŹđ
Pour into clean mason jars. These can be stored without processing in the refrigerator for a week or two.
This recipe makes a little over 2 cups. Repeat as desired or until you run out of those garden tomatoes!
